Eggplant stacks with Ricotta Patties

1 eggplant, sliced and pan fried till soft

100gms low fat ricotta

1 half cup capsicum diced

2 large mushrooms diced

1 egg

salt, pepper and parsley

cook mushroom and capsicum. Allow to cool. In a seperate bowl combined Ricotta, egg, salt, pepper and parsley. Mix well and then add cool capsicum and mushrooms.

In a small frying pay, make mixture in small patties and cook both sides.

On a plate add once slice of cooked eggplant and then pattie, continue untill finish.

Vegetable Mix

2 large onions, sliced

1 large red capsicum

100gms mushrooms, sliced

1 large eggplant diced

2 zuchini sliced

1 large tin of whole tomatoes

herbs, salt and pepper

Add onion to frying pan and cook slowly with a bt of water. Once soft, add capsicum and mushroom. When soft add tomatoes and herbs and cook until start to boil. Toss through the zuchini and eggplant - dont cook. do that for 5 mins and swithc stove off. Leave mixture to stand for about an hrs and continue to stir.

Tuna Salad

1 Qtr Red Onion

1 large tomatoe diced

Small tin of Tuna drained and flaked

Dash of Italian dressing

Salt and pepper

Combined together and chill

Omlette with mushroom

One egg, beaten

Dash of milk

Some salt and pepper

2 large mushrooms, diced

Some parsley & grated parmesen cheese

Combined together and put in small frying pan. Once you see bottom browning, flip half way and cook for a few more mins on slow.

Pan Fried Cabage

One Large Onion

3 Gloves Garlic

1 Qtr Cabage

Slice onion and garlic and pan fry with a little cooking spray. Add a small amount of water for oinion can go soft

Shred Cabage and stir through untill cabage has clapse and looks soft and brown
